This delicious Mexican avocado based dip is so easy to make – all our family enjoy it. It’s naturally vegan, fresh and healthy too – if you discount the copious amounts of wine & tortilla chips I consumed with mine lol!
It’s worth making from scratch as it’s so much nicer and fresher than shop bought & only takes a few minutes.
- 3 avocados – peeled, stones removed.
- 1 lime, juiced ( or a lemon)
- 1/2 onion, diced
- small handful chopped fresh coriander ( & or parsley)
- 2 tomatoes
- 1 clove garlic
- Salt & pepper to taste
- 1 pinch ground paprika (optional)
Chop & mash all the above ingredients- or process with a food blender or hand-held blender to a consistency you like – I personally prefer mine a bit chunky! Garnish with some of the fresh coriander.
Enjoy! You can store in a sealed container in the fridge for a couple of days – if there’s any left! It disappears quickly!
